Begin the meal with a stimulating Amuse Bouche created to pair sublimely with a glass of Legras & Haas Brut Champagne. Follow this with Smoked Tuna Carpaccio served with Foie Gras Croûton, Lemon Marmalade and Togarashi Dressing.
The indulgence continues with Coconut Boston Lobster Bisque with Coriander Chantilly. The creamy bisque finds its perfect wine partner in the Santa Ynez Valley, Star Lane Sauvignon Blanc 2006. Next is a melt-in-the-mouth Sous Vide Pigeon Breast with Red Pepper Risotto and Crispy Salted Baby Fish.
For main there is a choice of two epicurean delights: Chilean Sea Bass with Lemon Grass, Chardonnay and Ginger Potato Cream or USDA Beef New York Strip with Potato Pavé and Cognac Green Pepper Sauce. The versatile Dierberg Pinot Noir 2007, Santa Maria Valley, pairs impeccably with both dishes.
Ending this celebratory meal is a decadent Smoked Chocolate Cigar; coffee or tea, and Pralines plus Petit Fours, ensuring a classic conclusion, to a memorable dinner.
