Culinary maestro Paco Roncero puts his avant-garde twist on Nouvelle Cuisine at the city’s one and only revolving restaurant
VIEW62 by Paco Roncero, led by one of Spain’s most influential chefs, Paco Roncero, officially opens today. The restaurant’s highly anticipated opening has been rife among the city’s gourmets and is destined to be Hong Kong’s hottest restaurant as well as reinforce itself as an iconic Hong Kong landmark. VIEW62 by Paco Roncero, located on the 62nd floor of the Hopewell Centre in Wanchai on Queen’s Road East, part of The East, is the city’s only revolving restaurant completing the 360 degree turn, with unrivalled views from Victoria Harbour to The Peak.
Paco is dishing up avant-garde ‘Nouvelle Cuisine’ that is sure to make its mark on the global culinary landscape as it merges the latest culinary technology, outstanding creativity, and unforgettable textures and flavours. Guests can expect unique, produce-driven dishes that will leave them with a lasting memory and a desire to return.
Evening diners have a choice of two Chef Tasting menus: 14 and 16 courses respectively, each consisting of four-stages; snacks, tapas, main and dessert. Additionally, two set dinner menus; snack, soup, tapas, main and dessert are also available. For lunch, diners can enjoy two set lunch menus as well as an Afternoon Tea menu. The Chef Tasting Menu is priced at HK$1,400 (14 courses) and HK$1,800 (16 courses) per person; plus 10 per cent.
Highlights from the innovative Tasting Menu include the revolutionary XXI Century Omelette, which features slow-cooked onion as the base and a middle layer of creamy egg yolk sabayon that is completed with potato foam and olive oil and the divine Chilean Sea Bass with Green Bean Sauce and Iberico Air, served with sautéed green beans and anchovies.
With Spanish Olive Oil at the helm of Paco’s cooking, it is only a matter of time before the two Michelin-star chef achieves acclaimed praise for his use of flavours and textures. Olive Oil based dishes include: Olive Oil Butter, Lobster with Olive Oil Soup and Grapefruit, Beef Shank with Potato Purée and Black Olive Oil and Orange Sorbet with Arbequina Olive Oil, Passion Fruit and Pedro Ximenez Reduction.
Complementing the ground-breaking, elegant menu is the restaurant’s equally impressive contemporary interior, designed by renowned restaurant designer Ricky Hung Wai Lung of UN Design. VIEW62 is divided into three distinct areas – the bar lounge, which features a DJ booth and an eight-metre black marble bar embossed with mother of pearl; the main dining area with its undulating cloud-like ceiling created from 50,000 hanging wooden sticks and a semi-private dining area. The modern-classic fixtures and furnishings feature cosy lighting, retro black polished chrome, dusky purples and faux lizard skin.
As well as innovative dishes and pioneering techniques, the impressive bar area managed by Herbert Chak houses an extraordinary cocktail menu which mirrors the inventive creations of the kitchen. Signature cocktails include Ladies’ Choice: a variety of flavoured liqueur pearls to be enjoyed with champagne. Simply pop a pearl in your mouth and chase with champagne to create a popping, flavoursome experience with every sip. The Fruity-tinis are also delicious and come served with a liqueur flavoured string to enhance the experience.
